How To Make Creamy One-Pot Vegetarian Pasta
Bring to a boil: Add the first 10 ingredients to a large stockpot or deep sided sauté pan. Stir together and allow mixture to come to a boil over medium high heat. When the mixture comes to a boil, reduce heat and simmer and continue cooking for 10 minutes, stirring occasionally to prevent sticking. Most of the liquid should be absorbed.
Add the Alfredo sauce: Stir in the Alfredo sauce and continue to simmer for another 5 minutes or until the pasta is just tender.
Add the cheese: Remove the pan from the heat and stir in the grated Parmesan cheese.
Taste and Season: Taste and add more salt and pepper as needed and sprinkle in the red pepper flakes if you like.
Serve: Divide pasta into individual bowls and garnish with more grated Parmesan cheese and fresh chopped basil leaves.

How to Store Your Leftover Pasta
This creamy one-pot vegetarian pasta is best enjoyed fresh, but leftovers can be stored in an airtight container in the fridge for up to 3 to 5 days
Top Tip
Control Your Heat & Stir Occasionally: Once the pasta starts to boil, maintain a steady simmer. Too high of a heat can cause the pasta to stick, and too low won't cook the pasta evenly. Stirring occasionally helps prevent the pasta from sticking to the bottom and ensures even cooking.
FAQ
Yes! Substitute the Parmesan cheese with a vegan cheese alternative or nutritional yeast for a cheesy flavor without the dairy.
Absolutely! Whole wheat pasta will give a nuttier flavor and is a great fiber-rich option. Just be aware of possibly adjusting the cooking time as it might vary.
You can use heavy cream or for a non-dairy option use coconut milk, almond milk, or even a cashew cream blend to achieve that creamy texture.
