This looks delicious! I love strawberries, but have never had strawberry and mint together, and have never heard of Meyer lemons. I will have to look for some ne t time I go to the store. I've just recently tried Chia seeds, didn't realize they were so healthy for you. I will have to add those to my regular diet.

Hi Linda, I think the combination of the strawberrire, lemon and mint makes this recipe sing. If you can't find Meyer lemons just use regular lemons. Let me know how it goes.Hope you are having a wonderful week.

I have been making chia jam out of frozen berries on the stove top. I love your idea to just whiz it in a blender! The mint sounds like a great addition!
Celeste says
Hi Alison, I have never had chia jam cooked. I'll have to give it a try so I can compare the two techniques.
However, I like that this one takes no time to put together. Let me know how you like this one.
