Creamy One-Pot Vegetarian Pasta Meal ( Easy Recipe)

Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • cup capers
  • 1 28 oz. can diced tomatoes
  • 16 oz. package baby Bella mushrooms sliced
  • 12 ounces uncooked Ziti pasta or pasta of your choice
  • 1 ½ teaspoon dried basil
  • 1 ½ teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • cup of Alfredo sauce
  • 1 cup grated Parmesan cheese
  • Red pepper flakes
  • Fresh basil leaves for garnish

Instructions

  • Bring to a boil: Add the first 11 ingredients to a large stockpot or deep sided sauté pan. Stir together and allow mixture to come to a boil over medium-high heat. When the mixture comes to a boil, reduce heat and simmer and continue cooking for 10 minutes, stirring occasionally to prevent sticking. Most of the liquid should be absorbed.
  • Add the Alfredo sauce: Stir in the Alfredo sauce and continue to simmer for another 5 minutes or until the pasta is just tender.
  • Add the cheese: Remove the pan from the heat and stir in the grated Parmesan cheese.
  • Taste and Season: Taste and add more salt and pepper as needed and sprinkle in the red pepper flakes if you like.
  • Serve: Divide pasta into individual bowls and garnish with more grated Parmesan cheese and fresh chopped basil leaves.
