- 1 5 oz. bag of spinach
- 1 5 oz. bag arugula
- 1/2 cup sliced fennel
- 2/3 cup pitted and sliced cherries
- 2 nectarines sliced
- 1/2 cup pecans
- Cherry Dressing
- 2 cups pitted and sliced cherries
- 2 tablespoons fresh lemon juice
- 2 teaspoons apple cider vinegar
- 2 tablespoon olive oil
- dash of salt
Instructions
- Toss together spinach, arugula, fennel, cherries and nectarines in a large bowl.
- Blend together the dressing ingredients in a blender until smooth.
- Plate the salad and drizzle with dressing.
- Serve and enjoy!!!
