Ingredients

  • Salad
  • 1 5 oz. bag of spinach
  • 1 5 oz. bag arugula
  • 1/2 cup sliced fennel
  • 2/3 cup pitted and sliced cherries
  • 2 nectarines sliced
  • 1/2 cup pecans
  • Cherry Dressing
  • 2 cups pitted and sliced cherries
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons apple cider vinegar
  • 2 tablespoon olive oil
  • dash of salt

Instructions

  1. Toss together spinach, arugula, fennel, cherries and nectarines in a large bowl.
  2. Blend together the dressing ingredients in a blender until smooth.
  3. Plate the salad and drizzle with dressing.
  4. Serve and enjoy!!!
