Ingredients

  • 2 cinnamon sticks
  • 8 whole cloves
  • 2 star anise
  • ½ teaspoon cardamom seeds
  • 15 whole peppercorns
  • 4 ½ cups fresh water
  • 2 tsp fresh ginger paste
  • 16 Rooibos tea bags or ⅓ cup if using loose leaf tea
  • 2 tsp vanilla extract
  • 1-2 tablespoon maple syrup or honey or sweetener of your choice
  • milk or alternative milk of your choice

Instructions

  • Toast the spices: Using the flat side of a knife or the back of a spoon, gently crack the cloves and peppercorns. Add the cloves and peppercorns along with the other spices to a dry medium saucepan over medium heat. Stir and toast for 1-2 minutes, just until you can smell them.
  • Simmer the concentrate: Carefully pour in the 4 ½ cups of water (it may sizzle a little) and whisk in the ginger paste. Bring to a gentle simmer, then cover, turn the heat to low, and simmer for 10 minutes.
  • Steep the rooibos: Turn off the heat, add the rooibos, cover, and let it steep for 10-15 minutes. A longer steep is an easy way to get a stronger flavor. (Rooibos tea doesn't turn bitter the way black tea can.)
  • Strain and season: Pour the concentrate through a fine-mesh strainer into a jar or large measuring cup, pressing gently on the tea and spices. A few tiny bits of ginger may slip through, and that's totally fine. Stir in the vanilla. Taste it, then add maple syrup, honey, or sweetener of your choice 1 tablespoon at a time until it tastes just right to you.
  • Heat and froth the milk: In a clean saucepan over medium-low heat, warm the milk until it's steaming with small bubbles around the edge. Then froth it, just tilt the pan slightly, dip the frother in, and froth for 20–30 seconds until it's light and foamy. No frother? Whisk hard for about 30 seconds instead. I used an electric frother for my milk.
  • Build your latte: Fill each mug about halfway with hot concentrate, top with the hot milk, and spoon the foam over the top. Add a garnish if you like with a sprinkle of cinnamon.
