Matcha Chia Pudding

Ingredients

  • 1 cup almond or coconut milk
  • 1 teaspoon matcha powder
  • 1 teaspoon vanilla extract
  • maple syrup to taste
  • 2 tablespoons, chia seeds
  • 1 can of full fat coconut milk
  • 1 teaspoon vanilla extract
  • maple syrup to taste

Instructions

  1. Place can of full fat coconut milk in refrigerator to chill, I left mine in over night.
  2. In a large bowl,whisk (affiliate link) together milk, matcha powder and vanilla extract until well blended.
  3. Sweeten with maple syrup to taste, I added 2 tablespoons.
  4. Spoon mixture into serving bowls cover with plastic wrap and place in refrigerator for 2 or 3 hours or overnight.
  5. Stir in chia seeds, cover and place in fridge for 2 to 3 hours or overnight.
  6. Open the can of coconut milk and scoop out the firm layer of coconut cream from the top. The water that's left can be used in smoothies or you can just drink it.
  7. Place cream in a large bowl and mix with hand mixer until fluffy and light.
  8. Mix in vanilla and syrup to taste.
  9. Spoon cream on top of pudding.
  10. Serve and enjoy!
