This Creamy One-Pot Vegetarian Pasta is a cozy, comforting meal that’s delicious and filling. From stove to table in no time. And what’s great, there’s only one pot to clean.

Ingredients

2 tablespoons olive oil

3 cloves garlic, minced

1/3 cup capers

1 28 oz. can diced tomatoes

16 oz. package baby Bella mushrooms, sliced

12 ounces uncooked Ziti pasta( or pasta of your choice)

1 1/2 teaspoon dried basil

1 1/2 teaspoon dried oregano

1 teaspoon smoked paprika

4 cups vegetable broth

Salt and pepper to taste

2/3 cup of Alfredo sauce

1 cup grated Parmesan cheese

Red pepper flakes

Fresh basil leaves for garnish

Instructions

  1. Bring to a boil: Add the first 11 ingredients to a large stockpot or deep sided sauté pan. Stir together and allow mixture to come to a boil over medium-high heat. When the mixture comes to a boil, reduce heat and simmer and continue cooking for 10 minutes, stirring occasionally to prevent sticking. Most of the liquid should be absorbed.
  2. Add the Alfredo sauce: Stir in the Alfredo sauce and continue to simmer for another 5 minutes or until the pasta is just tender.

  3. Add the cheese: Remove the pan from the heat and stir in the grated Parmesan cheese.

  4. Taste and Season: Taste and add more salt and pepper as needed and sprinkle in the red pepper flakes if you like.
  5. Serve: Divide pasta into individual bowls and garnish with more grated Parmesan cheese and fresh chopped basil leaves.
